Option One- Basic Essential Cooking Skills

Online Self-Paced Virtual Only Class- Class starts when you are ready

This class is a great option for fast and efficient training. Accessible 24/7 is a basic cooking techniques course along with a one-hour food handler training. The class is open for 60 days (about 2 months) for completion. Certificates are downloaded and printed after the completion of classes.

Description of Courses

Cooking Basics online class

Cooking Basics offers a substantial culinary course of study for all those needing a foundation in cooking instruction. Because the training is self-paced, it builds a knowledgeable foundation that saves valuable time in training to professional standards. This wealth of core cooking information is available on mobile phones, tablets, and computers.

Cooking Basics' nineteen lessons cover a wide range of instruction, including kitchen equipment and tools, portion control procedures, basic cuts of meat, dry and moist heat cooking methods, slicing, dicing, chopping, plate presentation, seasoning, poultry, seafood, development of consistent recipes, waste management, workplace safety and more. This program utilizes customized, professionally staged videos that allow students to view and interact with professional chefs demonstrating crucial techniques from safely handling a carving knife, to preparing a roux, to stuffing a turkey. Students will witness procedures being correctly performed. Cooking Basics is the basis of a successful operation.

This course takes 9 hours to complete and, upon successful completion, provides a printable Cooking Basics certificate.

Food Handler Training online class

Food handler training is optional in most areas and this course provides excellent food worker training to teach the important principles of food safety to food handlers. Your local regulatory agency may have additional requirements. Please contact your local regulatory agency for more information.

Portions of the full certification training that only apply to food handlers who do not need to take an exam.

This training is a general food handler course. If your local health department requires a food handler card, you will need to take that course. This course takes one hour to complete and, upon successful completion, provides a printable food handler certificate.

This course is not to prepare workers to take a certification exam. The course to study for the certification exam is Food Safety Manager Certification Training.

There is no book or additional instructional support with these courses. Students would access the course from the website www.arlenecoco.com for 90 days.


COVID-19 Awareness online class

The purpose of this course is to educate students on COVID-19 risk factors and preventive behaviors. This course is designed to present the most current Covid-19 information. Many state governments have policies in place that require COVID-19 training for employees. In addition, employers must take steps to protect workers from COVID-19 exposure under the OSH Act General Duty Clause (§5(a)(1)). It is important to stay up to date on communications from your local resources such as your state and county health department for up-to-date information on reducing the spread of COVID-19. The course is not state-specific. Please refer to your state for specific state rules and guidelines.

Learning Outcomes:

  • Explains COVID-19

  • Identify Systems

  • How COVID-19 spreads

  • Define Social Distancing

  • Who is at risk

  • Etiquette

  • Current COVID-19 Tests

Completing this course takes less than an hour earning a printable certificate showing your dedication to infection control.

Head to our private class message boards on Google Classroom to talk through what you have learned with classmates and instructor. Every week, you also can join our live virtual lessons on zoom or Facebook live for an interactive classroom experience.

Step Three- Let's get cooking!

Roll up your sleeves and get to work in your kitchen. Execute the practical assignments, documenting the process along the way through a recipe with videos or photos when instructed to.

Recorded assignments to cover core lessons- The instructor will record on Video each lesson and each student makes the dish to practice the technique, video records or photographs it, and sends it to the instructor for assessment.

Students can watch videos and access materials 24/7 and work at their own pace. For the week. Virtual office hours are available weekly with Chef Coco for additional support.

Private Facebook Group and Instructor videos for support and additional learning resources.

5 student minimum requirement - open enrollment at specific times announced ahead of time.
